Ingredients
- 3 carrots
- 1 small mild apple, peeled
- 2 tbsp lactose-free yogurt
- 2 tbsp water
- 1 tbsp parsley
- 1 pinch salt
Method
- Grate the carrots coarsely and dice the apple finely.
- Cook both with the water, covered, for six to eight minutes.
- Cool until lukewarm.
- Fold in the yogurt and parsley and season lightly.
Why this recipe is gentle
Cooking the carrot and peeled apple until soft mellows the raw sharpness, and the dressing is a small amount of mild yogurt rather than anything acidic. There is no onion, garlic, citrus, or spice.
General information, not medical advice or a treatment claim. Reactions are individual. If heartburn or reflux is frequent, severe or persistent, see a doctor.
Tips
- Peel the apple and cook it soft, since raw fruit skin is harder to digest.
- If apple or dairy is a personal trigger, use pear or a plant-based yogurt instead.
- Let the salad cool to lukewarm rather than serving it cold from the fridge.
