Ingredients
- 70 g spelt semolina
- 500 ml lactose-free milk or oat drink
- 1 tsp acacia honey or maple syrup
- 1 pinch vanilla
- 1 pinch salt
Method
- Heat the milk or oat drink with the vanilla and salt.
- Whisk in the semolina gradually.
- Cook over low heat for five to eight minutes until creamy.
- Sweeten lightly if desired and serve warm or lukewarm.
Why this recipe is gentle
Cooked slowly over low heat, the semolina turns smooth and easy on the stomach, with no spice, citrus or acid. A small amount of honey or maple syrup keeps the sweetness light, and a lactose-free or plant-based milk keeps it gentle.

Tips
- Dairy and sweetness can be personal triggers. Choose a lactose-free or plant-based milk and sweeten sparingly.
- Whisk the semolina in gradually to avoid lumps and a heavy texture.
- Serve warm or lukewarm rather than cold.
