Ingredients
- 120 g pudding rice
- 600 ml lactose-free milk or oat drink
- 1 small mild apple, peeled
- 1 pinch cinnamon
- 1 tsp acacia honey
- 1 pinch salt
Method
- Bring the rice, milk or oat drink and salt to a boil.
- Cook over very low heat for about 25 minutes, stirring regularly.
- Dice the apple and soften it with a little water.
- Fold in the apple, sweeten lightly if desired and finish with a little cinnamon.
Why this recipe is gentle
The apple is peeled and cooked soft rather than eaten raw, and the pudding uses lactose-free milk or oat drink with no added fat. Sweetness comes from a touch of honey rather than anything sharp.

Tips
- Apple, cinnamon and dairy are individual, so use the cinnamon lightly or leave it out.
- Choose oat drink or lactose-free milk if dairy is a trigger for you.
- Cook the apple until very soft and serve the pudding warm.
