- 250 ml lactose-free milk or oat drink
- 100 g blueberries
- 1 pinch vanilla
- 1 pinch salt
Method
- Add the spelt semolina, milk or oat drink and a pinch of salt to a small saucepan.
- Bring gently to a simmer and cook over low heat for about 5 minutes, stirring until creamy.
- Prepare the blueberries and fold it in during the final two minutes, or soften it separately.
- Serve warm and finish with a small amount of vanilla.
Why this recipe is gentle
Spelt semolina cooked slowly in milk or oat drink is smooth and easy on the stomach, with no fat, spice, onion or citrus. Warming the blueberries into a quick compote softens their edge, making this a mild start to the day that may be better tolerated.

Tips
- Berries can be a personal trigger for some. Swap in mashed banana or pear compote if they don't sit well.
- Cook the semolina over low heat and stir often so it stays creamy rather than lumpy.
- Serve warm rather than piping hot, and keep the portion moderate.
