Ingredients
- 2 eggs
- 2 slices spelt toast
- 1 tbsp chives or parsley (optional)
- 1 pinch salt
Method
- Bring a pot of water to a gentle simmer and crack one egg into a cup.
- Slide the egg into the water and poach for 3–4 minutes, then lift out.
- Lightly toast the spelt bread and place the poached egg on top.
- Sprinkle with a pinch of salt and herbs and serve warm.
Why this recipe is gentle
The egg is gently poached in barely simmering water and needs no fat for frying. The spelt bread is only lightly toasted, and seasoning stays mild with salt and herbs rather than onion or spice.

Tips
- Fat level, portion size and personal triggers decide how well the breakfast sits with you.
- Keep the water at a gentle simmer so the egg stays soft and holds its shape.
- Toast the bread only lightly to avoid strong roasted flavours.
