Ingredients
- 2 slices spelt toast
- 150 g cottage cheese
- 2 eggs
- 1 tbsp chives
- 1 pinch salt
Method
- Soft-boil the eggs in gently simmering water for 6–7 minutes, then peel.
- Lightly toast the spelt bread and spread with cottage cheese.
- Halve the eggs, place on top and serve with chives and a pinch of salt.
Why this recipe is gentle
Cottage cheese and egg supply plenty of protein while the recipe skips onion, garlic, tomato and heat entirely. The eggs are gently simmered and the bread only lightly toasted, keeping this breakfast lower in fat and mild.

Tips
- Soft-boiled eggs feel easier on many people than eggs seared hot in a pan, and the cooking time is easy to adjust to taste.
- For a smaller portion, use one egg and one slice of toast; fat level and portion size influence individual tolerance.
- Swap the chives for a little fresh parsley if that herb suits you better.
