Ingredients
- 250 g chicken breast
- 140 g quinoa
- 1/2 cucumber
- 1 tsp mild olive oil
- 2 tbsp parsley
- 1 pinch salt
Method
- Rinse the quinoa and cook for 12–15 minutes, then let cool to lukewarm.
- Cook the chicken gently in the oil and cut into strips.
- Dice the cucumber and mix with quinoa and chicken.
- Season with parsley and a pinch of salt.
Why this recipe is gentle
Chicken breast and quinoa together provide plenty of protein without being greasy. The chicken is cooked gently over low heat, and the salad skips onion, garlic, tomato, citrus and spice heat, keeping it pleasantly mild.

Tips
- Rinse the quinoa well before cooking – it removes bitterness and makes it milder.
- Enjoy the salad lukewarm or at room temperature; very cold food can feel less comfortable.
- Use the oil sparingly and keep the portion in check; fat level, portion size and personal triggers influence individual tolerance.
