Ingredients

  • 2 sweet potatoes
  • 200 g low-fat quark
  • 3 tbsp chives and parsley
  • 1 tsp mild olive oil (optional)
  • 1 pinch salt

Method

  1. Wash the sweet potatoes, prick several times and bake at 200 °C for about 40–45 minutes until soft.
  2. Mix the quark with the finely chopped herbs and a pinch of salt.
  3. Slit the sweet potatoes lengthwise and press open slightly.
  4. Fill with the herb quark and serve warm.

Why this recipe is gentle

The sweet potatoes bake slowly and turn naturally soft, and the quark stays low-fat and mild. Only herbs and a pinch of salt are added, with no onion, garlic, citrus or tomato.

  • The olive oil is optional and can be left out if your stomach is sensitive.
  • Prick the sweet potatoes well beforehand so they bake evenly soft.
